Gavan honey comes from the blossom of wild astragalus shrubs that cover the high pastures of the Zagros and Alborz mountains. Light in colour with a mild, delicate flavour, it is one of the most popular everyday honeys in Iran and is often among the first to crystallise, a natural sign of purity.
