Araghiyat, Persian herbal distillates, are made by steam-distilling fresh flowers and herbs, a craft practised for centuries in Kashan, Shiraz and Khorasan. Rosewater is the best known, but mint, willow, orange blossom, chicory, fennel and dozens of others are used daily in Iranian homes.
Sharbat are traditional syrups made from fruit, herbs or distillates, diluted with cold water as a refreshing summer drink. Classics include sekanjabin (mint and vinegar), rose, sour cherry, saffron and lemon.
Mojtahedi offers pure distillates and syrups from reputable Iranian producers in sealed bottles. Use rosewater in desserts and rice, mix distillates with water and a little honey, and serve sharbat over ice or with basil seeds.
